Another fully traceable, single farmer Guatemalan from our partners at Onyx Coffee Importers. High in the mountains of the San Pedro Necta, Huehuetenango, Finca El Apiario lies close to the Mexican border. The Mendez family manages many small separations and lots within and around El Apiario. This particular farm/lot is owned and operated by Gabino Mendez and is called Aguas Altas. Gabino had been a teacher and bought his farm in 1989 with his savings. One of ten brothers, he helps support and control quality for his and his brothers’ lots, and helps manage their central wet mill. Gabino’s lot produces 50 to 60 quintiles parchment each season. Due to the cooler mountain climate, wet fermentation takes place over 30 to 35 hours, and coffees then dry on patios 8 to 10 days.
