Las Cotorras is grown by a group of roughly 300 small scale producers in the highlands of Chiapas near the Triunfo Biosphere Reserve. This coffee is produced organically: it is grown under native shade trees, fully washed and fermented for 24 hours at each farm, then dried in the sun on raised beds and concrete patios. The coffee gets its name from the Cotorras birds that prefer to nest in these coffeelands. These birds can be seen in many parts of the world, but they are endemic to Mexico and are seen as a symbol of authenticity and freedom.
This coffee is exceptionally clean, has a full body and mild acidity - a super approachable cup, great as the first cup of the day or with milk and sugar with dessert! Also makes a slammin' cold brew.
